Metadata in Word Documents

Metadata is information about a document and its history. When you open a Word document, you see its contents. In addition, documents may contain past edits, a history of who worked on the document, and other information you don't want others (especially adverse parties) to see.

This page has some links to articles discussing the Metadata problem and what to do about it.
